Rocky Road Yumminess

I was leafing through a magazine and saw a photo of some yummy confection with chocolate, nuts, and giant marshmallows, but alas, no recipe!  I started dreaming of how wonderful that must be, not only to eat but how much fun to make.  I made Smitten Kitchen's marshmallow recipe.  I love making marshmallows!  They are fun and pretty and it's just like magic!

After the marshmallows set up, and after I finished admiring them, I cut them into squares and arranged them on a piece of parchment paper that I had sprayed with cooking spray.  Then I just really cheated and melted a bag of dark chocolate chips, mixed in some peanuts, and poured the concoction over the marshmallows.

They are so pretty!  My sister-in-law really liked them too.  I made them with her in mind. 

As yesterday dawned bright, sunny, and oh so green out there, I remembered that I hadn't taken a photo of my lovely rocky road confection.  So I grabbed the camera, some lovely linens and dishes, and set up the shoot on a tree stump that has been calling my name.

Then my coasters decided they needed to get in on the action too!  They are such attention hogs.  Geesh!

I love chartreuse:)  Always have.  It's the color of new green leaves in the spring.  This color is making me really happy right now!
