What do you do when your frigid zucchini plant only gives you one squash during the entire season? Why, you make zucchini fritters, you do!
This recipe is adapted from Nigella Lawson's recipe in Forever Summer. I followed her recipe the first few times I made them, then I just started winging it. I just used my one zucchini, but you can make this in larger quantities. They don't save well though; you'll want to eat them fresh.
Shred your zucchini and put it in a bowl, stir in a couple teaspoons of kosher salt, (more if you have a lot of zucchini) then put it in a colander to drain for about 10-20 minutes depending on how much time you have. Grab a handful of mint and some parsley. For this amount I had about 1 tablespoon of chopped parsley, and a couple tablespoons of chopped mint. A quarter cup of shallot chopped fine, a bit of feta cheese, and an egg, some white flour, and a lime will round out the recipe. Oh, and a dash of paprika and pepper.
After your zucchini has drained a few minutes, rinse it, then spread it out on a lint-free towel, wrap it up and squeeze the water out.
Put the squeezed-dry zucchini in a bowl, add the herbs and shallot. Stir it up, then add about 2 tablespoons flour, a couple grinds of pepper, and a dash of paprika. Mix it will. Add the egg and mix it some more, then add the crumbled feta, and grate a little of that lime zest in there too. I don't add any salt, because even though you've rinsed the zucchini, there is still enough salt, and the feta is salty as well.
Heat up a little olive oil in a shallow skillet. When it's hot, add spoonfuls of the zucchini mix and mash them down a little into patties. Saute until golden brown and flip. Do the same on the other side. Use medium heat. When they are cooked, place them on a bed of arugula and add a squeeze of lime all over. Mmmmmmmm! I wish I had another zucchini so I could make more.
